Carlos loves to add a playful modern twist to childhood desserts. “Food to me is a simple playground,” Carlos says. “How you approach it will determine how much fun you will have in it.” Carlos’s biography is certainly full of “playgrounds.” He has worked at some of the nation’s preeminent hotels, resorts and restaurant, including the Brown Palace Hotel (Denver, CO.), Alex Restaurant (Las Vegas, NV.), The Hard Rock Hotel & Casino (Las Vegas, NV), The Ahwahnee Resort (Yosemite National Park, Calif.), Café del Rey (Marina Del Rey, CA) and most recently at The Cosmopolitan Resort for Holsteins Restaurant (Las Vegas, NV).
